Moroccan Mint Tea
Sweet green tea with fresh mint, poured high for a foamy top.

- Bring the water to the boil.
- Put the tea in a large teapot with a cup of boiling water. After a minute, pour this first brew into a cup and keep it. It holds the first, best flavour of the leaves.
- Swirl another cup of boiling water through the leaves to rinse them, then throw that water away.
- Pour the saved first brew back into the pot and top up with boiling water until it’s three-quarters full.
- Bring the pot to the boil on the stove over low heat.
- Take it off the heat and add the mint and sugar straight away.
- Pour a glass of tea and tip it back into the pot 2–3 times to mix.
- Serve right away, pouring from high above the glass to get the classic foam.
